From the mountains of Huehuetenango, Guatemala, Jabiru is a washed coffee produced by women smallholders participating in Café Delas—a program designed to strengthen women’s participation, leadership, and decision-making within coffee-growing communities.
This lot comes from Unión Cantinil, where coffee from more than 76 small producers is consolidated through a local micro-warehouse. By bringing collection closer to the farms, the program helps reduce transportation and logistical burdens while creating a more direct connection between individual producers and the coffee they grow.
Grown between 1,500–1,800 meters, Jabiru brings together Bourbon, Catuai, Caturra, and Pache varieties. The coffee is washed, fermented for 12–18 hours, and sun-dried on patios.
In the cup, expect a comforting foundation of dark chocolate, layered with cherry and apple sweetness and a clean citrus brightness.
