How Grind Size Changes the Taste of Coffee

Grind size is one of the most powerful controls you have over a brew. Breaking coffee into smaller particles creates more surface area and generally makes extraction happen more quickly. Larger particles slow that process down. That is why espresso is ground much finer than French press.
A Useful Spectrum
From finer to coarser, a typical progression is espresso, some AeroPress recipes, pour-over, automatic drip, and French press. Treat those labels as neighborhoods, not exact settings. Two grinders can use completely different numbers for the same particle size.
What Happens When Coffee Is Too Coarse?
Water can move through or around coarse particles too easily for the recipe, leaving desirable material behind. The cup may taste thin, sharp, sour, hollow, or short on sweetness. In pour-over, drawdown may also be unusually fast.
What Happens When Coffee Is Too Fine?
Very fine coffee exposes more surface area and can slow water flow. The cup may become bitter, dry, harsh, muddy, or astringent, and a pour-over may take much longer to drain. Extremely fine particles can also clog a paper filter.
Grind Size and Brew Time Work Together
A grind that works for a three-minute pour-over may not work for a long immersion recipe. Grind cannot be separated from contact time, agitation, temperature, ratio, and brewer geometry. That is why copying another person's grinder number is often less useful than copying the recipe and then dialing your grinder by taste.
How to Dial It In
Keep dose, water, temperature, and pouring method stable. Brew once and taste it. If it seems under-extracted, move slightly finer. If it seems over-extracted or drying, move slightly coarser. Repeat in small steps.
The goal is not to find the 'correct' grind number. It is to find the setting that makes that coffee taste its best with your equipment and recipe.
